Cooking with truffles
Storage
Keep truffles refrigerated, wrapped in paper towel inside a closed jar. Change the towel daily.
Go easy on heat
The aroma is delicate — shave truffle at the end, over a warm rather than boiling dish.
Fats and eggs
Butter, cream, eggs and fresh pasta carry truffle aroma best.
